Chakra Salad
To Prepare:
1. Chop the red and yellow pepper, scallions. Grate the carrots and shred the purple cabbage.
2. Mix together with the blueberries and add the dressing to taste.
Dressing
1. Whisk together: peanut butter, coconut water, rice vinegar.
2. Add the honey, sea salt, soy sauce or tamari and sesame oil.
Mix dressing and vegetables together.
Top with unsweetened coconut flakes, raw sunflower seeds and diced avocado.
Served chilled.
