Wolfie's Mason Jar Salad

 

In bottom of clean mason jar mix together the following recipe for French Vinaigrette:

3 tablespoons of olive oil

1/2 tablespoon of minced shallot

1/4 tablespoon of Dijon mustard

Pinch of Salt (optional)

Black pepper to taste

2 tablespoons of lemon juice or 1/2 lemon squeezed

 

Whisk or quickly stir bottle.

 Prep:

In frying pan cook one breast or use leftover chicken.

Fry bacon, 2 slices.

Cook boiled eggs: Method. Place egg in a small saucepan and cover with water.  Bring to a boil over high heat then immediately turn off the burner.  Cover the saucepan and let sit for 11 minutes then remove the egg using a slotted spoon and cool briefly in a cold water bath.

Peel and chop the egg. Set aside one for egg for salad.

Cube avocado.

Start with vinaigrette in mason jar, then let in the tomatoes, chives, chopped egg, romaine, avocado and chicken.  Crumble the blue cheese into the jar and add bacon on top.

Suggestions

Invest in a box of mason jars and make several at one time.  Mason jars help preserve fresh market produce for 3-4 days and create a great grab and go option for our busy lives.  Woodstock public library has recipe cookbooks for this NEW trending Mason Jar salad.  Also possible to use beans, grains, fruits and nuts.
